Ah, the bittersweet feeling of waking up on the final day of an epic holiday. The clock barely struck 07:00, and I found myself blinking away sleep, eager to squeeze every last drop out of our Mexican adventure. Breakfast at 08:00 was a comforting routine by now, and I savoured every bite, knowing it was one of the last I’d enjoy on this trip.
With the weather playing nice and no rain in sight, we made a beeline for the beach by 09:15. The absence of rain felt like a little gift from the holiday gods—a chance to bask in the Mexican sun one final time.
A Day Without Karen, But With Edinson
Sadly, Karen was nowhere to be seen today—perhaps enjoying a well-deserved day off. I did miss her cheerful presence, but our spirits were lifted by the ever-cheeky Edinson. With his trademark grin and a cheeky “hello mate,” he had us laughing in no time. It’s the small interactions like these that make a holiday unforgettable, don’t you think?
Lunchtime Delights: A Ceviche Masterclass
Now, onto one of the highlights of the day—lunch! And not just any lunch—Leo, our culinary maestro, decided to treat us to a ceviche masterclass. If you’ve never had the pleasure of tasting ceviche, let me paint you a picture. Imagine a tangy, zesty salsa mixed with fresh, raw fish—a dish that’s as refreshing as it is delectable.
However, health and safety regulations threw a small spanner in the works. Instead of the traditional raw fish, we were served cooked prawns. But honestly? It was still absolutely divine! Leo’s ceviche was a hit, and I found myself daydreaming about attempting to recreate it back home. Who knows, maybe I’ll become the ceviche king of my kitchen!
Afternoon Showers: A Tropical Twist
As the afternoon rolled in, so did the rain—typical tropical weather, right? The skies opened up, and we found ourselves ducking for cover at the beach bar. But when life gives you lemons—or in this case, rain—you make the most of it! The restaurant was cosy, and to our delight, we ended up sharing a table with a lovely couple from Newcastle. They were in high spirits, celebrating his 21st birthday. We chatted away, sharing stories and laughs, although, disappointingly, there was no ceviche on the menu. Can you imagine? A newfound love, and we couldn’t get another taste before we left!
A Rainy Farewell and Final Preparations
As we stepped outside the restaurant, the rain greeted us once again, falling harder than before. But fortune favours the prepared, and we managed to snag a member’s shuttle back to our block without getting drenched. Back in our room, it was time for the dreaded task of packing.
With bags zipped up and ready for tomorrow’s lunchtime pick-up, reality started to sink in. Our Mexican holiday was coming to an end. As I tucked myself into bed, my mind drifted over the past two weeks—the sights, the sounds, the flavours, and of course, the people who made it all so special.
